Spinach Bourani

Spinach Bourani is a Persian dish made by sautéing spinach with onions and garlic, then simmering with yogurt and spices.

Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Add chopped onions and sauté until they are translucent.
  3. Add minced garlic and sauté for another minute.
  4. Add chopped spinach to the pan and cook until wilted.
  5. Stir in turmeric, salt, and black pepper, and cook for an additional 2 minutes.
  6. Reduce heat to low and gently fold in the yogurt until well combined.
  7. Simmer the mixture for 5-7 minutes, stirring occasionally.
  8. Sprinkle dried mint over the top and remove from heat.
  9. Serve warm as a side dish or with rice.
