Aab-doogh Kheeyar is a chilled Persian yogurt soup made with cucumbers, herbs, and walnuts, perfect for a refreshing meal.

Instructions

  1. In a large mixing bowl, whisk the whole milk yogurt until smooth.
  2. Add the diced cucumbers, chopped walnuts, and soaked raisins to the yogurt.
  3. Stir in the dried mint, chopped dill, chives, and tarragon.
  4. Season with salt and freshly ground black pepper to taste.
  5. Mix all ingredients thoroughly until well combined.
  6. Chill the mixture in the refrigerator for at least 1 hour before serving.
  7. Serve cold with optional ice cubes for extra chill.

Prep

  • Soak raisins in water for 30 minutes before starting the preparation.
