Baghali Polo (Fava Beans+Dill Rice+ protein)

Baghali Polo is a Persian dish made by layering rice with fava beans and dill, served with saffron-infused chicken.

Instructions

  1. Rinse and soak the basmati rice in water for at least 30 minutes.
  2. In a large pot, bring water to a boil, add salt, and parboil the rice for about 5-7 minutes until partially cooked. Drain and set aside.
  3. In a pan, heat 2 tbsp of vegetable oil, add chopped onion and garlic, and sauté until golden brown.
  4. Add chicken pieces to the pan, season with salt, pepper, and turmeric, and cook until the chicken is browned and cooked through.
  5. Add saffron water to the chicken, cover, and let it simmer for 10 minutes.
  6. In a large pot, layer the parboiled rice with fava beans and chopped dill, starting and ending with rice.
  7. Melt butter and drizzle over the rice layers. Cover the pot with a lid wrapped in a clean kitchen towel to catch steam.
  8. Cook the rice on low heat for about 30-40 minutes until fully cooked and fluffy.
  9. Serve the Baghali Polo with the saffron chicken on the side.

Prep

  • Soak basmati rice for at least 30 minutes.
  • Dissolve saffron in warm water 30 minutes before cooking.
