Joojeh Kabab

Joojeh Kabab is a Persian grilled chicken dish marinated in saffron, lemon, and yogurt, then skewered and grilled.

Instructions

  1. In a large bowl, combine saffron water, lemon juice, yogurt, grated onion, minced garlic, olive oil, salt, and black pepper to create the marinade.
  2. Add chicken cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 4 hours or overnight.
  3. Preheat the grill to medium-high heat.
  4. Thread the marinated chicken cubes onto skewers, alternating with pieces of bell pepper and tomato halves.
  5. Grill the skewers for about 10-15 minutes, turning occasionally, until the chicken is cooked through and slightly charred.
  6. Serve the Joojeh Kabab hot with rice or flatbread.

Prep

  • Marinate chicken for at least 4 hours or overnight.
