Loobia Polo (red rice+green beans+ protein)
Loobia Polo combines basmati rice, green beans, and ground beef cooked with spices and tomato paste.

| Saffron (ground and dissolved in 2 tbsp hot water) | 0.5 | Tsp |

| Black Pepper (to taste) | 1 | Tsp |
| Vegetable Oil | 3 | Tbsp |
| Water | 4 | Cups |
Instructions
- In a large pot, heat 2 tbsp of vegetable oil over medium heat. Add chopped onion and sauté until golden.
- Add minced garlic and ground beef to the pot. Cook until the beef is browned.
- Stir in tomato paste, turmeric, cinnamon, salt, and black pepper. Cook for another 2 minutes.
- Add green beans to the pot and cook for 5 minutes, stirring occasionally.
- In a separate pot, bring 4 cups of water to a boil. Add rinsed basmati rice and cook until al dente, about 7 minutes. Drain the rice.
- Layer the rice and beef mixture in the pot, starting and ending with rice. Drizzle saffron water over the top.
- Cover the pot with a lid wrapped in a clean kitchen towel. Cook on low heat for 30 minutes to steam.
- Once cooked, gently fluff the rice with a fork before serving.
Prep
- Soak saffron in hot water for at least 1 hour before cooking.
