Loobia Polo (red rice+green beans+ protein)

Loobia Polo combines basmati rice, green beans, and ground beef cooked with spices and tomato paste.

Instructions

  1. In a large pot, heat 2 tbsp of vegetable oil over medium heat. Add chopped onion and sauté until golden.
  2. Add minced garlic and ground beef to the pot. Cook until the beef is browned.
  3. Stir in tomato paste, turmeric, cinnamon, salt, and black pepper. Cook for another 2 minutes.
  4. Add green beans to the pot and cook for 5 minutes, stirring occasionally.
  5. In a separate pot, bring 4 cups of water to a boil. Add rinsed basmati rice and cook until al dente, about 7 minutes. Drain the rice.
  6. Layer the rice and beef mixture in the pot, starting and ending with rice. Drizzle saffron water over the top.
  7. Cover the pot with a lid wrapped in a clean kitchen towel. Cook on low heat for 30 minutes to steam.
  8. Once cooked, gently fluff the rice with a fork before serving.

  • Soak saffron in hot water for at least 1 hour before cooking.
