Instructions
- Grill the eggplants over an open flame or in the oven until the skin is charred and the flesh is soft.
- Let the grilled eggplants cool, then peel off the charred skin and mash the flesh with a fork.
- Heat olive oil in a large pan over medium heat, add minced garlic, and sauté until golden.
- Add chopped tomatoes to the pan and cook until they break down and form a sauce.
- Stir in the mashed eggplant, salt, black pepper, and turmeric, and cook for about 10 minutes, stirring occasionally.
- Make a well in the center of the mixture, pour in the beaten eggs, and stir continuously until the eggs are fully cooked and incorporated.
- Adjust seasoning if necessary and serve hot with bread or rice.
