Instructions

  1. Grill the eggplants over an open flame or in the oven until the skin is charred and the flesh is soft.
  2. Let the grilled eggplants cool, then peel off the charred skin and mash the flesh with a fork.
  3. Heat olive oil in a large pan over medium heat, add minced garlic, and sauté until golden.
  4. Add chopped tomatoes to the pan and cook until they break down and form a sauce.
  5. Stir in the mashed eggplant, salt, black pepper, and turmeric, and cook for about 10 minutes, stirring occasionally.
  6. Make a well in the center of the mixture, pour in the beaten eggs, and stir continuously until the eggs are fully cooked and incorporated.
  7. Adjust seasoning if necessary and serve hot with bread or rice.
