Aaloo Fry (Potato fry)
Aaloo Fry is a simple stir-fried potato dish with spices and herbs, perfect as a side dish.

Instructions
- Heat vegetable oil in a large skillet over medium heat.
- Add mustard seeds and cumin seeds to the hot oil and let them splutter.
- Add sliced onions and green chilies to the skillet and sauté until the onions turn translucent.
- Stir in the curry leaves, turmeric powder, and red chili powder, and cook for another minute.
- Add the diced potatoes and salt, mix well to coat the potatoes with the spices.
- Cover the skillet with a lid and cook on low heat for 15-20 minutes, stirring occasionally, until the potatoes are tender.
- Remove the lid and increase the heat to medium-high. Fry the potatoes for another 5 minutes until they are golden and crispy.
- Garnish with chopped coriander leaves before serving.
