Aaloo Fry (Potato fry)

Aaloo Fry is a simple stir-fried potato dish with spices and herbs, perfect as a side dish.

Instructions

  1. Heat vegetable oil in a large skillet over medium heat.
  2. Add mustard seeds and cumin seeds to the hot oil and let them splutter.
  3. Add sliced onions and green chilies to the skillet and sauté until the onions turn translucent.
  4. Stir in the curry leaves, turmeric powder, and red chili powder, and cook for another minute.
  5. Add the diced potatoes and salt, mix well to coat the potatoes with the spices.
  6. Cover the skillet with a lid and cook on low heat for 15-20 minutes, stirring occasionally, until the potatoes are tender.
  7. Remove the lid and increase the heat to medium-high. Fry the potatoes for another 5 minutes until they are golden and crispy.
  8. Garnish with chopped coriander leaves before serving.
