Beerakaya Curry

Beerakaya Curry is a simple Indian dish made by cooking ridge gourd with spices and herbs, resulting in a flavorful curry.

Instructions

  1. Heat oil in a pan over medium heat. Add cumin seeds and mustard seeds, and let them splutter.
  2. Add chopped onions and sauté until they turn golden brown.
  3. Add ginger garlic paste and green chilies. Sauté for another 2 minutes.
  4. Add chopped tomatoes and cook until they become soft and mushy.
  5. Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
  6. Add the chopped ridge gourd and mix everything together. Cook for 5 minutes.
  7. Add water and curry leaves. Cover and cook on low heat until the ridge gourd is tender.
  8. Once cooked, garnish with fresh coriander leaves and serve hot.
