Beerakaya Curry
Beerakaya Curry is a simple Indian dish made by cooking ridge gourd with spices and herbs, resulting in a flavorful curry.

| Fresh Coriander (chopped for garnish) | 1 | Bunch |
Instructions
- Heat oil in a pan over medium heat. Add cumin seeds and mustard seeds, and let them splutter.
- Add chopped onions and sauté until they turn golden brown.
- Add ginger garlic paste and green chilies. Sauté for another 2 minutes.
- Add chopped tomatoes and cook until they become soft and mushy.
- Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
- Add the chopped ridge gourd and mix everything together. Cook for 5 minutes.
- Add water and curry leaves. Cover and cook on low heat until the ridge gourd is tender.
- Once cooked, garnish with fresh coriander leaves and serve hot.
