idiappam
Idiappam is a steamed rice noodle dish made from rice flour dough, pressed into thin noodles and steamed.
Ingredients

| Rice Flour (fine variety, preferably roasted) | 500 | Grams |
| Water (boiling) | 750 | Milliliters |
| Salt (fine) | 1 | Tsp |
| Coconut (freshly grated) | 1 | Cup |
| Oil (vegetable or coconut oil) | 1 | Tbsp |
Instructions
- In a large bowl, mix rice flour and salt thoroughly.
- Gradually add boiling water to the rice flour mixture, stirring continuously to form a smooth dough.
- Cover the dough with a damp cloth and let it rest for 10 minutes.
- Grease the idiappam press with oil and fill it with the dough.
- Press the dough into thin noodles onto greased idli plates or a steamer plate.
- Steam the idiappam for 10-12 minutes until cooked through.
- Remove from steamer and sprinkle freshly grated coconut over the idiappam before serving.
Prep
- Roast rice flour lightly in advance if not using pre-roasted flour.
