Khichdi
Khichdi is a comforting one-pot dish made by cooking rice and lentils together with spices and vegetables.

| Asafoetida (powder) | 0.5 | Tsp |
| Turmeric Powder (for color) | 1 | Tsp |
| Ginger (grated) | 1 | Inch |
| Green Chili (slit) | 2 | Count |
| Carrot (diced) | 1 | Count |
| Green Peas (fresh or frozen) | 100 | Grams |
| Water (for cooking) | 1 | Liter |
| Salt (to taste) | 1.5 | Tsp |
| Coriander Leaves (chopped for garnish) | 1 | Bunch |
Instructions
- Heat ghee in a large pot over medium heat.
- Add cumin seeds and let them splutter.
- Add asafoetida, turmeric powder, grated ginger, and slit green chilies. Sauté for a minute.
- Add diced carrot and green peas. Cook for 2-3 minutes.
- Add rinsed basmati rice and yellow moong dal. Stir well to combine with the spices.
- Pour in water and add salt. Stir and bring to a boil.
- Reduce heat to low, cover the pot, and let it simmer for 20-25 minutes until rice and dal are cooked.
- Turn off the heat and let it sit covered for 5 minutes.
- Garnish with chopped coriander leaves before serving.
Prep
- Rinse basmati rice and yellow moong dal and soak them for 30 minutes.
