Madras Potato fry
Madras Potato Fry is a spicy South Indian dish made by frying potatoes with mustard seeds, curry leaves, and spices.

Instructions
- Heat vegetable oil in a large skillet over medium heat.
- Add mustard seeds and let them splutter.
- Add curry leaves, minced garlic, and grated ginger. Sauté for 1 minute.
- Add sliced onions and sauté until they turn golden brown.
- Add diced potatoes, turmeric powder, red chili powder, coriander powder, and salt. Mix well.
- Cover the skillet and cook on low heat for 15-20 minutes, stirring occasionally, until potatoes are tender and crispy.
- Remove the lid and increase the heat to medium-high. Fry for another 5 minutes to crisp up the potatoes.
- Serve hot as a side dish with rice or bread.
