Mix Veg Vepudu
Mix Veg Vepudu is a South Indian stir-fried vegetable dish using a variety of vegetables and spices.

Instructions
- Heat oil in a large pan over medium heat. Add mustard seeds and cumin seeds, and let them splutter.
- Add curry leaves, grated ginger, and minced garlic. Sauté for a minute until fragrant.
- Add chopped onions and sauté until they turn translucent.
- Add chopped tomatoes and cook until they become soft.
- Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
- Add diced potatoes, carrots, green beans, bell pepper, and cauliflower florets. Stir well to coat the vegetables with the spices.
- Cover the pan and cook on low heat for about 15-20 minutes, stirring occasionally, until the vegetables are cooked through.
- Remove the lid and increase the heat to medium-high. Stir-fry the vegetables for another 5 minutes to get a slightly crispy texture.
- Garnish with chopped fresh cilantro and serve hot.
