Mix Veg Vepudu is a South Indian stir-fried vegetable dish using a variety of vegetables and spices.

Instructions

  1. Heat oil in a large pan over medium heat. Add mustard seeds and cumin seeds, and let them splutter.
  2. Add curry leaves, grated ginger, and minced garlic. Sauté for a minute until fragrant.
  3. Add chopped onions and sauté until they turn translucent.
  4. Add chopped tomatoes and cook until they become soft.
  5. Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
  6. Add diced potatoes, carrots, green beans, bell pepper, and cauliflower florets. Stir well to coat the vegetables with the spices.
  7. Cover the pan and cook on low heat for about 15-20 minutes, stirring occasionally, until the vegetables are cooked through.
  8. Remove the lid and increase the heat to medium-high. Stir-fry the vegetables for another 5 minutes to get a slightly crispy texture.
  9. Garnish with chopped fresh cilantro and serve hot.
