Pappu Boova (spiced Lentil rice) with Okra fry
Pappu Boova is a spiced lentil rice dish served with crispy okra fry, combining aromatic spices and fresh vegetables.

| Salt (or to taste) | 2 | Tsp |
| Oil (for cooking) | 4 | Tbsp |
| Ghee | 2 | Tbsp |
| Water | 4 | Cup |
Instructions
- Heat 2 tablespoons of oil in a large pot. Add mustard seeds and cumin seeds, and let them splutter.
- Add chopped onions, green chilies, and curry leaves. Sauté until onions are translucent.
- Add ginger garlic paste and sauté for another minute.
- Add chopped tomatoes, turmeric powder, red chili powder, and salt. Cook until tomatoes are soft.
- Add soaked toor dal and mix well. Pour in 4 cups of water and bring to a boil.
- Add rinsed basmati rice to the pot. Stir well, cover, and cook on low heat until rice and dal are cooked.
- In a separate pan, heat 2 tablespoons of oil. Add sliced okra and fry until crispy.
- Serve the spiced lentil rice hot, topped with crispy okra fry and a drizzle of ghee.
Prep
- Soak toor dal in water for at least 1 hour before cooking.
