Pad See Ew with Shrimp

Pad See Ew with Shrimp is a stir-fried noodle dish using rice noodles, shrimp, and vegetables, flavored with soy sauce.

Instructions

  1. Prepare the rice noodles according to package instructions if using dried noodles. Set aside.
  2. In a small bowl, mix dark soy sauce, light soy sauce, oyster sauce, and sugar. Set aside.
  3. Heat 2 tablespoons of vegetable oil in a large wok over medium-high heat.
  4. Add minced garlic and stir-fry for 30 seconds until fragrant.
  5. Add shrimp and stir-fry until they turn pink and are cooked through. Remove from the wok and set aside.
  6. Add the remaining vegetable oil to the wok. Add the beaten eggs and scramble until just set.
  7. Add broccoli and carrot slices to the wok. Stir-fry for 2-3 minutes until vegetables are tender-crisp.
  8. Add the prepared rice noodles to the wok, followed by the sauce mixture. Toss everything together to coat the noodles evenly.
  9. Return the cooked shrimp to the wok and add ground white pepper. Stir-fry for another 2 minutes.
  10. Serve hot, garnished with additional white pepper if desired.

Prep

  • Soak dried rice noodles in warm water for 30 minutes if using dried noodles.
