Pad See Ew with Shrimp
Pad See Ew with Shrimp is a stir-fried noodle dish using rice noodles, shrimp, and vegetables, flavored with soy sauce.

Instructions
- Prepare the rice noodles according to package instructions if using dried noodles. Set aside.
- In a small bowl, mix dark soy sauce, light soy sauce, oyster sauce, and sugar. Set aside.
- Heat 2 tablespoons of vegetable oil in a large wok over medium-high heat.
- Add minced garlic and stir-fry for 30 seconds until fragrant.
- Add shrimp and stir-fry until they turn pink and are cooked through. Remove from the wok and set aside.
- Add the remaining vegetable oil to the wok. Add the beaten eggs and scramble until just set.
- Add broccoli and carrot slices to the wok. Stir-fry for 2-3 minutes until vegetables are tender-crisp.
- Add the prepared rice noodles to the wok, followed by the sauce mixture. Toss everything together to coat the noodles evenly.
- Return the cooked shrimp to the wok and add ground white pepper. Stir-fry for another 2 minutes.
- Serve hot, garnished with additional white pepper if desired.
Prep
- Soak dried rice noodles in warm water for 30 minutes if using dried noodles.
