Thai Rice Noodles with Shrimp

Prepare Thai rice noodles with shrimp using stir-frying and a blend of sauces and fresh ingredients.

Instructions

  1. Soak the rice noodles in warm water for 30 minutes until softened, then drain.
  2. In a small bowl, mix soy sauce, fish sauce, brown sugar, and lime juice to make the sauce.
  3. Heat vegetable oil in a large wok over medium-high heat. Add minced garlic and stir-fry for 30 seconds.
  4. Add shrimp to the wok and stir-fry until they turn pink and are cooked through, about 3-4 minutes.
  5. Push the shrimp to one side of the wok and pour the beaten eggs into the other side. Scramble the eggs until cooked.
  6. Add the soaked noodles to the wok and pour the prepared sauce over them. Toss everything together to combine.
  7. Add bean sprouts and green onions, and stir-fry for another 2 minutes until everything is well mixed and heated through.
  8. Transfer the noodles to serving plates and garnish with crushed peanuts, chopped cilantro, and sliced red chili.
