Tom Yum Soup
Tom Yum Soup is a Thai hot and sour soup prepared with shrimp, lemongrass, and lime leaves, simmered in a flavorful broth.

Instructions
- In a large pot, bring the chicken stock to a boil.
- Add lemongrass, kaffir lime leaves, galangal, and bird's eye chili to the pot. Simmer for 5 minutes to infuse flavors.
- Add mushrooms and tomatoes to the pot. Cook for another 5 minutes.
- Add shrimp to the pot and cook until they turn pink and opaque, about 3-4 minutes.
- Stir in fish sauce, lime juice, and sugar. Adjust seasoning to taste.
- Remove from heat and garnish with cilantro and green onions before serving.
